TIE ME DOWN!

Ingredients:
  • 1.25 oz Palo Cortado Península
  • .5 oz Brandy de Jerez Solera Reserva 
  • .5 oz Pistachio fat washed Gin
  • .5 oz Lustau East India Solera
  • .25 oz Cherry Syrup
Preparations: Combine all ingredients over ice in a yari, stir and pour.
Garnish: Maraschino Cherry

Inspirations: I wanted to unite three different Lustau expressions to showcase their unique flavors while they blend in harmony. I also wanted low abv so the drink will go down easy and you’ll want another right away. I chose Palo Cortado as a base, for its finesse and body; Lustau East India Solera, for its richness and acidity; and Brandy de Jerez Solera Reserva, for its lovely oak notes. Nuttiness is one of my favorite qualities in sherry. To highlight it, I used pistachio and cherry notes — the vanilla and mocha of the Palo Cortado stand out against the pistachio while the oak of the Brandy de Jerez pops from the cherry syrup. The name of my cocktail comes from the 1990 Pedro Almodóvar film, Tie Me Up! Tie Me Down! But it also is inspired by how the pistachio and cherry tie all of the flavors from the three Lustau expressions together just as the wine in the Solera system is tied together while heading down from the 2nd criadera to the 1st to the Solera at the end.
