Close and seal the cocktail shaker then proceed to shake the shaker for 10 – 12 Seconds so that the pineapple juice can froth/expand to create a solid body. Crack open the cocktail shaker and pour the bonded cocktail into the coupe glass that was placed on the bar top earlier. Hang the manicured pineapple leaf on the rim of the coupe glass and grate fresh cinnamon in the center. Now smell and enjoy!

Inspirations: El Morro, San Cristobal, El Cañuelo, Las Líneas. All are not just names of famous forts, but are symbols of the strong Spanish influence in Puerto Rico that continue to shine everyday in its everyday cuisine, music, and drinks. Imagine standing in the glorious sun on top of Fort San Cristobal feeling the ocean breeze and all of a sudden becoming parched. You then begin walking down to a restaurant and craving a tropical cocktail to quench your thirst during the dinner hours of the evening. You order your cocktail and taking the first sip makes your body shiver with joy while your mouth begins to water with delight as you relax. My inspiration for this cocktail comes from that amazing experience I had on the island, as well as Puerto Rico’s unique tropical island flair and then combining the beautiful Spanish Sherry of Lustau into a delicious modern Tròpical style cocktail. By taking the dark chocolate and coffee notes of the Lustau Moscatel, the tangy acidity of Lustau Oloroso Don Nuño, some tropical fruits to bring in a sexy mouth feel as well as a touch more acid, all while taking the lovely dry crispness of the Lustau Fino Jarana and infusing it with apples & cinnamon into a shrub. Once all combined it creates a beautifully bright, savory, and warm tropical cocktail that truly will make you feel my experience by taking you to Puerto Rico with each sip and that was my all around goal with combining these flavors.
